"It's feeling really good!" exclaims <b>Brendan Sodikoff</b> about his latest project, an Italian-focused eatery named <a href="http://www.diningchicago.com/restaurants/cocello/profile" target="_blank">Cocello,</a> which <b><i>312DD</i></b> <a href="http://312diningdiva.blogspot.com/2014/03/brendan-sodikoff-replaces-dillmans-with.html" target="_blank">exclusively told you about</a> in March. <br />
<br />
What's different is that the concept is no longer an "Italian steak bar." "We ran out of room on the menu and dropped the steak focus," explains Sodikoff. "I fell in love with the lighter feel and emphasis on classic regional Italian food, Negronis, great coffee and Italian wines."<br />
<br />
<b><i>Negronis?!</i></b> <br />
<br />
A sneak peek of the opening menu revealed that the restaurant will feature four plays on the traditional Italian aperitif: <b>classic </b>(gin, campari, sweet vermouth), <b>white </b>(gin, cocchi, dry vermouth), <b>rye </b>(rye, campari, sweet vermouth) and <b>cognac </b>(cognac, sweet vermouth, chartreuse).<br />
<br />
The food menu features a number of hand-made pasta, seafood and vegetable-focused dishes. We're especially looking forward to the whole-roasted turbot as well as porchetta of stuffed pork belly, rosemary and roast garlic. There will be limited availability on both items. <br />
<br />
Cocello soft opens on April 22 and through Thursday it will offer 40 percent off food. It officially opens to the public Friday, April 25. <br />

The New Orleans-inspired <a href="http://www.NouveauTavern.Com" target="_blank">Nouveau Tavern</a> opened in River North only six months ago, yet it was abruptly shuttered last Friday by the <b>Chicago Police Department</b>, according to <a href="http://chicago.eater.com/archives/2014/04/15/nouveau-tavern-shut-down-by-chicago-pd.php" target="_blank"><i>Eater Chicago</i></a>: <br />
<br />
"<b>Sources say that current Nouveau ownership is ineligible for a liquor license because of a felony conviction and the establishment was operating under previous ownership's expired licensing.</b> Police responded to a complaint last week which lead to an investigation and the subsequent closure."<br />
<br />
NT consultant <b>Teddy Gilmore</b>—who admits to a tax evasion felony conviction from the late 1990s—tells <b><i>312DD </i></b>that the restaurant's partners do not have felony records. He adds that Nouveau, which re-opened Monday, is being unfairly targeted because the neighbors and police do not want an influx of African Americans frequenting the neighborhood. <br />
<br />
Additionally, partner <b>Marsette Magnum</b> released a full statement regarding the situation exclusively to <b><i>312DD</i></b>:<br />

"WE ARE OPEN FOR BUSINESS! At some point we have to be judged on the quality of our food and not the color of our skin! On the evening of April 11, Nouveau Tavern was arbitrarily and unreasonably shut down by the Chicago Police Department due to an apparent misunderstanding about the details related to various license renewals. <br />
<br />
"A simple form was completed Monday morning...and Nouveau Tavern was re-opened. It is our firm belief that Nouveau Tavern is being targeted for racial reasons. The tactics used were harsh and unnecessary. No other business would have been treated this way. <br />
<br />
"African Americans aren't welcomed in River North....Chicago is one of the most racially divided cities in America. Everyone that lives in Chicago.... knows its two Chicagos! We have a right to be in River North! We've built a world-class establishment. We have great cuisine with great service. <br />
<br />
"Race shouldn't be an issue, but unfortunately in Chicago, it is. <b>Please understand that this is bigger than just a license. This is genocide....the extermination of an African American Business in River North.</b> Nouveau Tavern will rise to challenge and continue to strive for excellence in Chicago. The proper and correct processes have been followed for all the City of Chicago licenses." <br />

I get frequent pitches from the publicists behind <b>Jon Taffer</b>—the acerbic host of <b>Spike TV</b>'s <b>"Bar Rescue"</b>—who push him as "an internationally recognized, award-winning hospitality expert, highly respected management guru, author of the ultimate guide to running a bar/restaurant/nightclub entitled 'Raise The Bar,' and a esteemed tastemaker and go-to source for the newest trends in the food, beverage & nightlife industries."<br />
<br />
With those credentials, you'd think he'd know which spots to target for his show—which claims to <b>"give failing nightlife establishments one last chance at success."</b><br />
<br />
Apparently not in Chicago.<br />

On Wednesday, <a href="http://www.diningchicago.com/restaurants/threedotsandadash/profile" target="_blank">Three Dots and a Dash</a>'s <b>Paul McGee</b> got a call from Taffer's office. That's pretty perplexing, considering that the slick, Polynesian-inspired lounge has garnered a number of accolades since opening last summer, including from the <a href="http://www.chicagotribune.com/features/food/chi-140109-chicago-tribune-2014-dining-awards--005,0,5669280.photo" target="_blank">Chicago Tribune <i>2014 Dining Awards</i></a> and prestigious <a href="http://articles.chicagotribune.com/2014-01-31/features/chi-grace-a-big-winner-in-jean-banchet-awards-20140131_1_des-architectes-pastry-chef-grace-restaurant" target="_blank"><i>Jean Banchet Awards.</i></a> The bar also draws lines down the alley almost every night of the week. <br />

Needless to say, Three Dots doesn't fit in the "failing nightlife establishments" category. Here was Paul McGee's priceless response when he received the call:<br />

It's that time of year again, and <b><i>Food & Wine</i></b> announced Tuesday its annual list of what it considers <b>"the culinary superstars of the future."</b><br />
<br />
On that list is <b>Dave Beran</b>, the hot shot chef who first worked under <b>Grant Achatz</b> at <a href="http://www.diningchicago.com/restaurants/alinea-1/profile" target="_blank">Alinea</a> before he went on to take over the reigns as chef de cuisine at Achatz's ground-breaking <a href="http://www.diningchicago.com/restaurants/next-1/profile" target="_blank">Next</a> restaurant when it opened in 2011. <br />

It's sweet that Beran's getting the props from <b><i>Food & Wine</i></b>—even though he's been nominated for <b>James Beard</b>'s <b><i>Best Chef Great Lakes</i></b> award a few years in a row, including <a href="http://312diningdiva.blogspot.com/2014/03/heres-complete-list-for-2014-james.html" target="_blank">this year.</a> <br />
<br />
The 2014 Best New Chef honorees also includes three chefs from Texas (including "Top Chef" winner <b>Paul Qui</b>), one from San Francisco, and of course, one from New York. The special issue comes out in July. <br />

The legendary deejay/music producer/house music innovator <b>Frankie Knuckles</b> has passed away in his Chicago home, according to a number of media outlets.<br />

<b><i>Chicago Tribune</i></b> rock critic <b>Greg Kot</b> <a href="http://www.chicagotribune.com/entertainment/music/turnitup/chi-frankie-knuckles-obit-20140331,0,565674.column" target="_blank">writes in an obit</a> Tuesday:<br />

"In Chicago, Frankie Knuckles was called the 'godfather,' not because of any underworld connections, but because he helped build house – a style of Chicago dance music that revolutionized club culture in the ‘70s and ‘80s and still resonates around the world today.<br />

"Knuckles died Monday at the age of 59, as confirmed by his longtime business partner, <b>Frederick Dunson</b>. More details would be forthcoming Tuesday, Dunson said, who said in an email that Knuckles 'died unexpectedly this afternoon at home.'"<br />
<br />
May he rest in peace and keep the music going forever in Chicago nightclubs and beyond.<br />

He's best known for his beautiful drinks, and Chicago imbibers will get their first opportunity to meet the award-winning mixologist <b>Alex Kratena</b> when he conducts a two-day residence at the <a href="http://gochicago.about.com/od/chicagoluxuryhotels/p/Langham-Hotel.htm" target="_blank">Langham Hotel</a>'s <a href="http://www.diningchicago.com/restaurants/Travelle/profile" target="_blank">Travelle.</a><br />
<br />
Kratena holds down the fort at <b>Artesian Bar</b> at <b>The Langham</b> in London, and March 27-28, we will get to find out why his accolades include <b>“The World’s Best Cocktail Menu”</b> at <b>Tales of the Cocktail</b> (2011), <b>“World’s Best Hotel Bar”</b> and <b>“International Bartender of the Year”</b> at <b>Tales of the Cocktail </b>(2012), and <b>“The World’s Best Bar,”</b> an award sponsored by <b><i>Drinks International Magazine</i></b> (2012).<br />

Kratena's Chicago debut marks the beginning of his U.S. tour, during which he will also visit Langham properties in Boston, New York and Pasadena. He's charged with introducing a specially curated menu of cocktails that will be available only at the U.S.-based Langham hotels. <br />

As part of his Chicago residence, he'll host a mixology class 5-6:30pm March 27. It's $50 per person, space is limited and reservations may be made by <a href="http://www.diningchicago.com/restaurants/Travelle/profile" target="_blank">calling the restaurant.</a> Look for Kratena's creations to be inspired by the Chicago fire, with flavor profiles such as talisker, port, sherry, citrus, cacao and raspberry. Sounds about right!<br />

Even more signature cocktails may be enjoyed at a number of steakhouse-focused restaurants around town. While most diners are familiar with the massive wine lists available at the likes of <a href="http://www.diningchicago.com/restaurants/chicagocutsteakhouse/profile" target="_blank">Chicago Cut Steakhouse</a> and <a href="http://www.diningchicago.com/restaurants/iiiforkschicago/profile" target="_blank">III Forks,</a> they may not know that they may order some of the best drinks in the city. <br />

Whatever you do, do <i>not </i>call <a href="http://www.diningchicago.com/restaurants/cocello/profile" target="_blank">Cocello</a> a steakhouse concept. The latest dining-and-drinking project by <b>Brendan Sodikoff</b> and his group <b>Hogsalt Hospitality,</b> Cocello is described by the red-hot restaurateur as an "Italian steak <i>bar</i>." <br />
<br />
<b>On April 14, Cocello takes over the venue currently housing <a href="http://www.diningchicago.com/restaurants/DillmanS/profile" target="_blank">Dillman's,</a> which specializes in classic Jewish deli fare. Sodikoff tells <b><i>312DD </i></b>exclusively that he will close Dillman's on April 6 and reopen it as <b>Dillman's Pastrami Shop</b> in a next door space this summer. </b><br />
<br />
But where did the name and concept for Cocello (pronounced "co-chell-o") come from?!<br />

"(It's a) long story that involves a reckless trip through the Mediterranean in my 20s with warm weather, lots of cheap wine and friends," reveals Sodikoff. "I'd like to stress though that our focus has evolved a bit and we're all about good wine these days."<br />
<br />
He also wants to stress that Cocello is not <a href="http://www.diningchicago.com/restaurants/bavettesbarboeuf/profile" target="_blank">Bavette's Bar & Boeuf</a> 2.0. That's his super-successful French steakhouse that's located only a few blocks away from Cocello.<br />
<br />
"This is boutique Italian with great drinks, hand-made pasta and smaller cuts of prime meats and fish," he continues. "(Also expect) lots of Italian wine and Amaro-based cocktails. It'll be very traditional with a touch of old Chicago, but no red sauce."<br />

Oh, boy. Controversial <b><i>Esquire </i></b>editor-at-large <b>Josh Ozersky</b> is at it again. This time his target is pastries—and the people behind them. <br />
<br />
His <a href="http://www.esquire.com/blogs/food-for-men/dessert-pointless" target="_blank"><b>latest essay</b></a> is so venomous that it makes me wonder if he hates puppies and babies and ponies, too. <i>Especially </i>this gem: <b>"Why would any restaurant have a second kitchen—with a second kitchen staff—in order to present abstract art at the end of meals? What need is there, really, for anything more complex than a scoop of sherbet?"</b><br />

That paragraph as well as his declaration of <b>"the time has come to denounce complicated desserts"</b> sent several high-profile Chicago pastry chefs in a tizzy, particularly former <a href="http://www.diningchicago.com/restaurants/motorestaurant/profile" target="_blank">Moto</a> chef <b>Ben Roche.</b><br />
<br />
"I think there is a very, very strong chance that you make WAY more money, live much more comfortably and put in a lot less work than the thousands of passionate people you are belittling in your throw-away article," Roche wrote in a Facebook post in which he tagged Ozersky. <br />
<br />
"You have a very douche-y 'amIright?' kind of attitude in the way you dismiss hard-working young people," he continued. "People in your position have power in that a lot of people will read your work and just accept it as fact. I think that is safe to say. The fact that you wield that power in such a negative way just to put people down so you can get your money is disgusting."<br />
<br />
Moto owner/chef <b>Homaro Cantu</b> also chimed in: "Here goes Joshua Ozersky - stirring up the pot again. ... It's a good thing I am switching gears and doing the world's most simple sugar free donut at <a href="http://www.diningchicago.com/restaurants/BerristaCoffee/profile" target="_blank">Berrista Coffee.</a>"<br />
<br />
And executive producer of <b>JM PUREPASTRY</b>/former <a href="http://www.diningchicago.com/restaurants/lobbyatthepeninsulachicago/profile" target="_blank">Peninsula</a> chef <b>Jimmy MacMillan</b> simply issued a direct challenge to Ozersky: "You are not right. Please come visit me in Chicago."<br />
<br />
Of course I have an opinion, especially after reading this particular sentence: <b>"By the time dessert arrives, the diner, drunk, full, and tired, wants nothing more than a bed to drop into, or possibly a coffin."</b><br />
<br />
Hey, Josh, how about giving this old adage some thought when you dine out next time: <b>"Save room for dessert."</b><br />

He shared the news with staffers at his venues such as <a href="http://www.diningchicago.com/restaurants/Metro/profile" target="_blank">Metro,</a> <a href="http://www.diningchicago.com/restaurants/gingerman-1/profile" target="_blank">Gingerman Tavern</a> and <a href="http://www.diningchicago.com/restaurants/doubledoor-1/profile" target="_blank">Double Door</a> on Tuesday, reassuring them it would be business as usual.<br />

I've always gushed over <a href="http://www.diningchicago.com/restaurants/next-1/profile" target="_blank">GT Fish & Oyster</a>'s garlic-and-tomatoes infused mussels, so you can only imagine my glee when I learned I'd finally be able to re-create the dish at home. <br />
<br />
GT chef/partner <b>Giuseppe Tentori</b> announced Tuesday that he contributed to the newly released cookbook, <b><i>Lodge Cast Iron Nation: Great American Cooking from Coast to Coast.</i></b> The book showcases a number of easy-to-make recipes using cast-iron skillets, pots and Dutch ovens. <br />

Tentori says about his contribution: "I love this recipe because it is the way we used to eat mussels in Italy."<br />

Popular online takeout service <b>GrubHub</b> (which acquired takeout biz <b>Seamless</b> in 2013) <a href="http://www.crainsnewyork.com/article/20140310/BLOGS02/303099984/as-ipos-surge-companies-work-to-stick-out" target="_blank">filed to go public in February,</a> which means a bunch of changes are on the way to make the company more profitable to investors.<br />
<br />
According to a Chicago bar/restaurant owner, one of those changes includes <b>"demanding money from restaurants to get better placement (on the website)."</b><br />
<br />
That sounds a little <b>Yelp</b>-ish to me. I use GrubHub on the regular, and when I'm feeling especially lazy, I type in "burgers," "pizza," etc. to conduct a search to see what restaurants come up. Once all the results appear, you can organize choices by "the best (or highly rated)," "cheapest" or "closest." If you look closely, the restaurants are NOT listed in alphabetical order, so those paying for placement will always be prominently displayed. <br />

A few Chicago bar owners tell <b><i>312DD </i></b>that the city's aiming to tame the rowdy St. Patrick's Day crowds by issuing some exorbitant fines for those infamous "all-you-can-drink" packages. <br />
<br />
"It started with New Year's Eve and all the '$100 open bar' ads," says one tavern owner, who asked to remain anonymous. "No on-site enforcement; the city just mailed you court hearing dates and fines of $3,500. Then they decreased them to $3,000."<br />
<br />
He adds that the city liquor commission "reinterpreted" the happy hour law to suit their needs. "If an advertisement does not state how many drinks are included, they assume it's unlimited and are ticketing them." <br />

Another owner sends a warning out to all the establishments that plan to offer drink packages during St. Patrick Day season: "Anyone who advertised St. Pat's 'all you can drink,' 'bottomless,' etc. will be getting nailed (by the city) this week and next."<br />

Whoa.<br />

"Instead of finding ways to help small businesses in this economy—especially this time of the year—the city is squeezing everyone with more fines to generate revenue. All the business owners are fed up," he says. "I'm told by my attorney the aldermen are getting together to try and get the city to drop these charges."<br />

With James Beard winning chef <b>Paul Kahan</b> as one of the partners and former <a href="http://www.diningchicago.com/restaurants/Avec/profile" target="_blank">avec</a> and <a href="http://www.diningchicago.com/restaurants/Publican/profile" target="_blank">Publican</a> chef <b>Erling Wu-Bower</b> at the helm of the Italian seafood-focused restaurant, this actually doesn't come as a surprise. The restaurant—which opened in early December 2013—came in at #10 on the list, and here is what Richman had to say:<br />

"<b>(Brendan) Sodikoff</b> will reconcept Balsan, but details on what it will become are currently unavailable. "I'm selling the Arami GO! spot in Streeterville for super cheap. ... It's fully fixtured and ready to rock."<br />

And <a href="http://www.diningchicago.com/restaurants/thegage/profile" target="_blank">The Gage</a>'s head bartender <b>Thomas Mooneyham </b>is moving on, according to his latest Facebook status:<br />

I'm pretty serious about this, and it makes up for all this horrible weather we've been experiencing lately.<br />

If you can hold off until Feb. 15, you'll get a chance to witness one of the most spectacular Chicago restaurant openings I've heard about in a long time. It's not as though the new Lincoln Park location for <a href="http://www.diningchicago.com/restaurants/proteinbarlincolnpark/profile" target="_blank">Protein Bar</a> is even all that fancy, it's what owner <b>Matt Matros</b> is doing for the public that's got me all geeked.<br />
<br />
On opening day, the store will first host a sunrise yoga class at 6am, then the doors officially open at 11am when <b>the first 100 customers will receive $500 gift cards (Yes, that is $50,000 in gift cards).</b><br />
<br />
One public relations veteran exclaimed about this promotion: "I have done a lot of openings and anniversary PR, including the <b>Potbelly's</b> 20th anniversary free giveaways, but this is one of the best I have heard of in a long time. It's good idea for new and repeat diners; and good for the hood."<br />
<br />
Something tells me that folks will be lining up overnight for this opportunity, so don't forget to set your alarm clocks!<br />

He says that the average person hanging out at the Bucktown restaurant didn't even realize that <b>Lady Gaga</b> was in attendance because she was pretty much dressed like everyone else: in dark, casual clothing. "She didn't really stand out," he insisted.<br />

But once word got out that the colorful pop icon was in the house, everyone in the front room bar wanted in on the "Chicago Fire" party in the back party space. The secret password was passed around like free Cheetos. By night's end, what was supposed to be a chilled-out evening for the cast, crew and friends turned into rockin' bash.<br />

He failed to disclose to <b><i>Zagat </i></b>as well as <b><i>312DD </i></b>his plans for the cocktail menu, but he did give me this one solid: "(Expect) lots and strong."<br />

When I think of someone walking into a Chicago restaurant or bar brandishing a gun—who is <i>not </i>a cop—all I can picture is John Wayne. In a 10-gallon hat. Strutting in cowboy boots. With a holster on his hip. <br />

I don't want that image in my head, but it's now become a reality since Illinois passed the <a href="http://www.diningchicago.com/restaurants/next-1/profile" target="_blank">concealed carry law</a> in 2013. The law went into effect on Jan. 5 and restaurants and bars all over town have been posting the above sign in their windows. <br />

I totally get why they must do it, but what about the restaurants and bars that do not?! That means some gun-toting guy or gal will have the right to bring a gun into an Illinois establishment. And you won't even know about it because it'll either be in a handbag or hidden under a sweater. <br />

My biggest issue with this new law is that with all the liquor flowing in these spots I frequent, who's to say that some angry person won't take it out on others if for some reason he (she) doesn't get his (her) way? Remember the <a href="http://www.latimes.com/nation/nationnow/la-na-nn-wife-of-movie-theater-shooting-victim-20140122,0,4675749.story#axzz2rWEptjQP" target="_blank">movie theater murder</a> a few weeks ago?<br />

The Lincoln Park apartment complex housing the popular <a href="http://www.diningchicago.com/restaurants/juno/profile" target="_blank">Juno Sushi Restaurant</a> on the first level suffered an early-morning fire, <a href="http://www.diningchicago.com/restaurants/next-1/profile" target="_blank">according to <i>ABC-7 Chicago</i>.</a><br />

According to the report, the extra-alarm fire broke out early Friday morning and heavy smoke appeared on all three floors of the building. Thank goodness no injuries were reported, but residents are displaced for now. Just two weeks ago, the <b><i>Chicago Tribune</i></b> named Juno partner <b>Jason Chan</b> <a href="http://www.chicagotribune.com/features/food/chi-140109-chicago-tribune-2014-dining-awards--010,0,5472668.photo" target="_blank"><i>Restaurateur of the Year.<b></b></i></a><br />

<b>UPDATE:</b> Here's an official Juno statement, which was posted on Facebook Friday evening:<br />

"Juno’s owners and staff are still in shock over the fire that started above the restaurant in the early morning hours today. Thankfully, no one was injured. <b>The front of the restaurant and the apartments in the building were badly damaged, but fortunately Juno’s kitchen, sushi bar and main dining room were not damaged by the fire.</b> The Juno family sends our wholehearted wishes to the tenants in the building that the disruption to their lives by this event will be minimal.<br />

"Due to our amazing success since Juno’s opening in June, evidenced by the many accolades from customers, colleagues and friends in Chicago’s restaurant community and press, we will be hard at work to get Juno open as quickly as possible. We will have to re-build the separate bar area at the front of the restaurant, but because of the as-yet unknown extent of the upstairs repairs by others, and water and ice damage to parts of Juno from firefighting efforts, <b>we cannot immediately determine how long it will take us to open our doors again.</b> We have already put the wheels in motion to get to the repairs as soon as possible, though, and will keep everyone posted on our progress on a regular basis."<br />

Here's hoping that the restaurant and residents get back on their feet ASAP. <br />

<a href="http://www.diningchicago.com/restaurants/Jam/profile" target="_blank">JAM</a> executive chef <b>Jeffrey Mauro</b> is partnering with <b>Homaro Cantu</b> (<a href="http://www.diningchicago.com/restaurants/ingrestaurant/profile" target="_blank">iNG,</a> <a href="http://www.diningchicago.com/restaurants/motorestaurant/profile" target="_blank">Moto</a>) for that revolutionary new bakery, <a href="http://www.diningchicago.com/restaurants/BerristaCoffee/profile" target="_blank">Berrista Coffee.</a> That's the sweets shop featuring the "miracle berry" that's replacing sugar in most of the pastries. <br />

Mauro should bring some innovation to the table as well, considering his pedigree (<b>Charlie Trotter's,</b> <a href="http://www.diningchicago.com/restaurants/NorthPond/profile" target="_blank">North Pond</a>) and legions of fans packing JAM on the regular for one of the best brunches in town. And don't panic, JAM devotees. <b>Mauro will continue his JAM duties in the morning and spend afternoons at Berrista. </b><br />

There's still no opening date, but look for Berrista to debut in the spring. <br />
