Local Chefs Go Crazy Over Wild Arctic Char

"The two-week summer fishery was an absolute delight that had the city's most talented chefs humbled to have such a majestic species in their kitchens," gushed Carl Galvan, one of the hardest-working fishmongers for Surpreme Lobster, about Cambridge Bay Wild Arctic Char.

Such a statement makes me seriously pay attention, and it turns out that by mid-August, these fish will return to their natural habitat under the ice caps of the Arctic Circle.

To celebrate their "final 2010 runs," Galvan's gathered what he says are some of the best chefs in the city to whip up signature dishes during two special events you don't want to miss.

Each dinner begins with a welcome reception at 6:30 that will include hors' d'oeuvres and drinks from local wineries, distillers and breweries. Then guests will indulge in a seated, seven-course supper highlighting the Wild Arctic Char as interpreting by a number of local chefs. Each course will be paired with wine, beer or a cocktail.

Reserve a seat at Blackbird for the August 18th dinner in the upstairs salon. Collaborating chefs are Blackbird's Michael Sheerin, Curtis Duffy (Avenues), Phillip Foss (Lockwood), Todd Stein (Cibo Matto), Andrew Zimmerman (Sepia) and Brian Enyart (Topolobampo).

Or head to Lincoln Park for the celebration at Kith & Kin on August 25. Joining owner/chef David Carrier are his chef de cuisine Andrew Brochu, plus Paul Virant (Vie), Ryan Poli (Perennial), Chris Pandel (Bristol) and Jared Wentworth (Longman & Eagle).

Call Blackbird or Kith & Kin to score your seat. The dinner is $125 per person, and only 60 reservations will be available for both.
