Longman & Eagle Cited For Health Violations

The Michelin-starred Longman & Eagle apparently failed a number of major food and health violations when inspectors last visited on August 9. The violations were listed as Risk 1, which is considered high.

Here's exactly what they found at the Logan Square eatery:

18. NO EVIDENCE OF RODENT OR INSECT OUTER OPENINGS PROTECTED/RODENT PROOFED, A WRITTEN LOG SHALL BE MAINTAINED AVAILABLE TO THE INSPECTORS
Comments: FOUND OVERFLOWING GARBAGE CONTAINERS WITHOUT LOCK AND CHAIN, AND GREASE STAINS ON GROUND AREA, AREA NOT BEING PROPERLY CLEAN AND MAINTAINED, SERIOUS CITATION ISSUED: 7-38-020

33. FOOD AND NON-FOOD CONTACT EQUIPMENT UTENSILS CLEAN, FREE OF ABRASIVE DETERGENTS
Comments: MUST CLEAN VENTS ABOVE COOKING EQUIPMENT FIRST FLOOR AND BASEMENT AREAS

35. WALLS, CEILINGS, ATTACHED EQUIPMENT CONSTRUCTED PER CODE: GOOD REPAIR, SURFACES CLEAN AND DUST-LESS CLEANING METHODS
Comments: MUST PROVIDE A DROP CEILING BASEMENT PREP AREA ABOVE PREP TABLES, MUST SEAL CEILING COMPLETELY, OR REMOVE TABLES IF NOT BEING USED FOR PREP

38. VENTILATION: ROOMS AND EQUIPMENT VENTED AS REQUIRED: PLUMBING: INSTALLED AND MAINTAINED
Comments: MUST PROVIDE THREE SINK STOPPERS FOR THREE COMPARTMENT

40. REFRIGERATION AND METAL STEM THERMOMETERS PROVIDED AND CONSPICUOUS
Comments: MUST PROVIDE WORKING THERMOMETERS INSIDE ALL COOLERS

41. PREMISES MAINTAINED FREE OF LITTER, UNNECESSARY ARTICLES, CLEANING EQUIPMENT PROPERLY STORED
Comments: MUST CLEAN AND BETTER MAINTAIN BASEMENT AREA, REMOVE ALL CLUTTER

  1. I love that place. Seems a little bit excessive... Does every restaurant pass these pieces? Not sure if if this will stop me from going back, but I am disappointed. I guess this explains it all:

  3. these aren't huge deals. they got written up for not having sink stoppers? and when did the inspection happen that the garbage was overflowing? I've worked in restaurants where waste management doesn't show up till two days after their weekly scheduled pick up...what are you supposed to do? notice none of the offenses were actually food or sanitation related

  4. No working thermometers in the coolers aren't food related? Proper temperature control is a huge sanitation issue.

  5. You must keep in mind every thing the city of Chicago does is driven by money. They fine the restaurants for nonsense, for an extreme interpertation of the code that only benefits the city. Sure you need working therm's in the refers in addition to the ones already installed by the manufacture, but what if it is a freezer? You will still get cited for a freezer that is obviously maintaining temp without a therm hanging in the warmest possible location of the freezer. It's all about the money, nothing else. Sanitation relates to harmful levels of bacteria not sink stoppers. I don't use sink stoppers in my kitchen, because my DJ's (dishwashers) put every thing through the dishmachine to properly wash and then sanitize and air dry faster than a 3 comparment sink ever could. Sure spilled grease attracts vermin and is stinky, but do you eat in the alley next to the dumpster or grease trap? Most of the city's food inspecters simply read some papers and take a test to become a sanitarian. It's not they they have a phd in food born pathegons and under stand why I as a chef let my duck confit rest at room temp before putting it into the walkin, or why I cook my steaks from room temp vs. 35 degrees. As far as not having the logs from the monthly pest inspections, thats an easy fix. I just copy my bills with notes and put it in a binder in my kitchen. It doesn't mean they don't get bug control, it means the pest control papers were not within easy reach of the inspector. Non sense.
