. . . Chicago's Culinary Crossroads at Bistronomic.

• To celebrate the nations represented during the North Atlantic Treaty Organization (NATO) Summit, the Illinois Restaurant Association hosts the first-ever Chicago's Culinary Crossroads through May 25.

• As part of the initiative, chefs from visiting nations teamed up with executive chefs from a number of high-profile Chicago restaurants for special menus.

• At Bistronomic, chef Martial Noguier reunited with Gilles Epié, the chef/owner of the Michelin-starred Restaurant Citrus Etoile in Paris. The Frenchmen worked together in the early 1990s.

• Epié, who hasn't visited Chicago in 10 years, created a prix-fixe, three-course menu of some of his favorite dishes.

• Highlights included an extra juicy seared John Dory with bay leaves under skin and chicken breast with soy, lime and egg yolk, served with grilled white and green asparagus. The bitter-sweet chocolate soufflé with Sichuan pepper, vanilla ice cream and whipped cream also received rave reviews.

• Those who dine at a minimum of three of Chicago's Culinary Crossroads' participating restaurants will have a chance to win a pair of tickets to Chicago Gourmet, which happens later this fall.
