Carrie Nahabedian Calls Out Current Trends, Casual Restaurants In 'Chef's Journal'

Not much has been revealed about the forthcoming French-inspired restaurant from Carrie Nahabedian (Naha), but one thing is clear: It will not be a casual sit-down spot.
In her own words, she elaborated in Chef's Journal:
"I have tired of all casual restaurants—no tablecloths, small plates, sharing food, no reservations, 'dumbed down' service and wine lists, hosts with attitudes, no live person answering the phones during business hours, and my new favorite, paying for bread."
