Martial Noguier's Q&A On Bistronomic

Chicago mag's Dish snagged an interview with Martial Noguier and his new gig at Bistronomic—the new casual focused French eatery 312DD told you about Wednesday night.

The highlights:

On his vision:

"Like a modern bistro... Not a bistro that you find with croque-monsieur and blah blah blah."

Structure of menu:

"I’m going to do small plates, medium plates, large plates. The small plates will be like a big salad with Capriole goat cheese and white truffle oil. It will be Belgian endive with Great Hill blue cheese. It will be also, for middle plates, a salade niçoise, a tuna tartare, a scallop. And for entrées, it will be like Amish chicken breast with mushroom ragout, Italian parsley, and lemon confit."

On restaurant's setting:

"We are going to do some wood tables. We are going to put placemats. Beautiful tables. Like a wood. Dark wood tables, you know. To be more like bistro-feeling. No tablecloths."

Bistronomic's set to open Feb. 1 with entree prices ranging $17 to $23.

Hey, anything is possible, but right now I'm not sure. I will be following up as the opening date approaches.

I tried to find a website and the first link that comes up when searching "Bistronomic Chicago" is Graham Bowles restaurant. Duh!! Probably not what these guys want.
