Tavernita was supposed to open this summer, but now the innovative, Spanish- and Latin-focused restaurant project from the Mercadito team is set to open in September.

We were already excited about this latest dining option in River North, but now that we have more info on the bar program, we're counting down the days until it opens.

The award-winning beverage consultants Tad Carducci and Paul Tanguay of the Tippling Bros. are behind everything booze, which means that it's certain to be over the top.

First off, get ready for what they're calling "kegged" cocktails. The duo has apparently developed a system to accurately batch the signature cocktails and seal them in airtight Cornelius kegs. Eight drinks will be offered on tap at any given time.

Manning the taps will be the head "batchologist," who will be tasked with mixing Tavernita's on-tap cocktails, using fresh ingredients. Those will be available at the restaurant's 24-seat main bar boasting 48 tap heads (where you'll also find a number of craft beers).

While the main bar serves as the centerpiece of Tavernita's beverage program, the Barcito lounge will offer a more casual drinking experience inspired by Spanish pintxos bars, to match its food offerings. There will be a large by-the-glass wine program, a wide selection of bottled beers, as well as a separate selection of cocktails from those offered at Tavernita's main bar.

And a third bar, in the elevated lounge, will offer the same beverage options as the main bar during regular dining hours and a separate menu after hours.
